Apple Cake (using vegetable oil; flavored with cinnamon and vanilla extract)

Ingredients

2 cups flour
1 1/2 cups sugar
1 cup oil
2 teaspoon vanilla extract
2 teaspoons cinnamon
3 teaspoons Magic baking powder
4 eggs
2 cups apples, peeled and diced



Directions

Preheat oven to 325 degrees F.

Grease a 9 inch rectangular or 2 (8 inch) square cake pans.

In a large bowl, beat first 7 ingredients well with a mixer at medium speed; beat for 3 minutes.

Stir in apples.

Spread in pan(s).

Bake for 1 hour.
