Torta di Mele (Apple Cake, without shortening, with walnuts; flavored with lemon zest)

Ingredients

1 cup flour
1/2 cup ground walnuts
3/4 cup sugar
2 teaspoons baking powder
4 eggs, separated
1 large apple
Zest of 1 lemon




Directions

Grease a 9 inch springform pan.

Beat the egg whites until stiff. Set aside.

Cream the egg yolks with the sugar.

Gradually add the flour to the creamed egg mixture.

Add baking powder to the batter.

Add the ground walnuts.

Add the lemon zest -- mix well (but don't use an electric blender).

Fold in the egg whites.

Peel, core and slice the apples.

Pour the batter into the greased springform pan.

Arrange the apple slices on top of the batter.

Sprinkle with sugar.

Bake in a 350 oven for about 50 minutes.




Notes

This is a relatively easy "coffee cake" to make. But don't expect a tall cake; despite the beaten egg whites and creamed egg yolks, this cake is rather small in size. Nonetheless, it has a fresh nutty flavor. Photo: Mary Melfi.
