Ciambella (Southern Italian lemon cake, using vegetable oil; flavored with lemon zest)
Originated from: Guardialfiera, Molise, Italy
Occasion: Weddings and other special events

Ingredients

4 "large-sized" eggs
6 oz. milk
6 oz. vegetable oil
9 oz. sugar
1 1/2 cups of flour
4 teaspoons baking powder
Zest of 1 lemon

Confectioners' [icing] sugar for dusting



Directions

Beat eggs with sugar.

Add milk and oil.

Add flour and baking powder.

Fold in lemon zest.

Bake in a 350 degree F oven for 45 minutes or more.

Cool.

Dust with sugar before serving.
